Easy Ricotta

imageIf you’ve imageever had a lot of whole milk and wonder what you can do with it (besides hydrating the grandkids), make ricotta!     First, add 6 cups of whole milk and 1 teaspoon of salt to a stainless steel or enameled pot. Over medium heat, bring to a full boil. imageRemove from heat and stir in 3 tablespoons of good white wine vinegar. imageLet stand 1 minute (until curds separate from whey), then scoop out curds with a handled strainer. Spoon into large sieve lined with a coffee filter – over a bowl, to continue draining. Let stand 25 minutes, then chill. imageUse immediately or refrigerate up to 5 days.imagethat’s it Just 3 ingredients and VOILA!
